Renee Koerner trades exclusively in farm-raised American Paddlefish, from which they produce paddlefish caviar as well as paddlefish meat. It is the most cleanly and fairly produced fish one could ever dream of.
And it further helps that the caviar Renee makes is a superb version of this luxurious treat, the product of exhaustive research involving out-of-print Russian manuals, an extensive knowledge of salt curing, and years of hard work. But most of all, the Koerners’ utter refusal to compromise their standards for commercial gain. Renee insists only on her ultra-sustainable farmed fish, tended for years in clean reservoirs, and never wavers from her carefully honed artisanal methods of caviar making.
